Professional Usage Tips:
Ideal For:
- Light white ganache, crémeux, or mousse
- Bavarois, panna cotta, or whipped creams
- Glazing entremets and mirror cakes
- Molding bonbons and signature bars
- Pairing with fruit purées or acidic elements
Tempering Guide:
- Melt: 40–45°C
- Cool to: 26–27°C
- Work at: 28–29°C
Recommended Pairings:

Storage & Handling:
