Callebaut Cocoa Mass Easymelt is made from 100% pure ground cocoa beans – no sugar, no dairy – delivering deep, bold cocoa intensity in its rawest form. In callets format for quick melting and easy blending, it’s perfect for flavor boosting, ganache customization, and bean-to-bar chocolate production.
Ideal for:
- Adjusting cocoa content in custom chocolate recipes
- Intensifying chocolate flavor in ganaches, sauces, or creams
- Crafting bean-to-bar or high-percentage couverture
- Deepening flavor in truffle fillings and pralines
- Creating intense dark bars or pastry bases
How to Use:
- Melt to 45–50°C
- Blend with cocoa butter, sugar, or milk powder if needed
- Temper like chocolate when used on its own
